Recipe for Wonderful Pineapple Pie

Although ‘National Pie Day’ came and went on January 23rd, it is not too late to bake a pie that is both nourishing and delicious.

National Pie Day was created simply to celebrate the pie.  It is a day to bake or cook your favorite pie.  Even more importantly, it is a day set aside to enjoy eating pies! But any day is a great day to bake a pie

One of my favorite pies – and one well worth trying is pineapple pie.  

National Pie Day was created by the American Pie Council. The American Pie Celebration began in 1986 to commemorate Crisco’s 75th anniversary of “serving foods to families everywhere”.

The first pies appeared around 9500 BC in the Neolithic period.

Here’s my recipe for a unforgettable pineapple pie:

 

Ingredients

3 eggs

1/3 cup butter (melted)

2 Tbsp lemon juice

½ cup water

1 cup sugar

¼ cup flour

¼ tsp salt

1 can crushed pineapples drained

 

Beat on low eggs slightly, add butter, lemon juice & water.

Add sugar, flour & salt.

Beat until smooth, pour in pineapple & stir.

Bake at 400 degrees for 35-40 minutes

Use lattice pie crust
